hm ok so I can use the 67.8 drivers for everything else but for NIC i have to find another driver?

NIC is completely disabled in BIOS, so windows doesn't even see it. This doesn't matter? On XP i simply installed everything else except ethernet drivers seemed to work ok.

If you don't use the NVIDIA LAN port, it makes no sense to install the nForce Ethernet driver v67.80.

As far as I know there doesn't exist any nForce chipset driver package for Vista x86/x64 (not even a modded one).

My suggestion: Install Vista x64 and look what happens. The only actual Vista nForce driver, which may be useful for you, is the SMBus driver v4.64, but I don't know, if nForce3 chipsets are fully supported.

Is there a way to test if my system is performing subpar? And is there a safe way to test different drivers?

The best way to compare both Operating Systems XP and Vista on your system would be, if you create a separate partition for Vista (minimum size: 25 GB). Then you can test different nForce driver versions without currupting your currently running OS.
