I recently replaced my Logitech MX510 optical with the Logitech MX1000 laser mouse. I am amazed at how smooth and responsive this mouse is. I haven't had any problems with lagging in games and such. This is by far the best mouse I have ever used.

No lags here. The mouse (for me) is smooth as silk and it can operate on almost any surface. Great mouse, get it!

No offense but I've used it for quite some time and my diamondback is still far superior. Get a razer and love it :)

As for what interface, it depends.
The USB bus operates at 125 hz.
I believe the stock PS2 sampling rate is 80 hz.
In XP, the ps2 port sampling rate is adjustable up to 200hz.
I have an el-cheapo logitech mouse that only samples at 125, no matter what interface you use.
You can also hack your USB ports from a lowly 125 up to 500, it's not even that hard.
But it makes a huge difference.
If you use PS2, definately change your sampling rate to 200 hz.
That's just in your mouse properties in the device drivers list.
To hack your USB port involves either hex-editing your win32/drivers/usbport.sys file, or replacing it with a previously hacked file.
Either way, you have to do it in safe mode, or the windows protection sceme immediately overwrites your changes with it's hidden backup files.
My logitech 510 does 450 hz.
My microsoft v1.1 optical scroll mice ($8 each!!) all do 500hz.
I wouldn't spend big dollars on a mouse trying to increase it's feel, I'd just increase the polling rate or sampling rate to allow for more inputs.
It makes your mouse much more responsive, and the price is right!
